Beef tripas simmered with aromatics until tender, then fried in lard until shatteringly crisp outside and creamy within — the two-stage technique every Jalisco taquero swears by. A fiery árbol salsa and plenty of lime cut the richness.

Method

  1. Rinse the tripas thoroughly under cold water, rubbing them with the halved limes, then cut into 3-inch lengths.

  2. Cover with water, add the onion, garlic, bay, and salt, and simmer until tender but not falling apart.

  3. While they simmer, toast the árbol chiles and char the tomatoes on a comal, then blend with garlic and salt into a hot, rusty salsa.

  4. Drain the tripas well — dry tripas crisp, wet tripas steam.

  5. Fry them in lard over medium-high heat, turning occasionally, until deeply golden and crackling at the edges.

  6. Chop the crisped tripas, warm the tortillas, and build each taco with salsa de árbol, onion, cilantro, and a hard squeeze of lime.
