TAQUIZA — Authentic Regional Taco Archive
120 curated Mexican culinary specifications: 70 tacos, 20 salsas, 10 sauces, 4 tortillas, and 16 sides — documented like a spec sheet, shot like a gallery.
A taquiza is a Mexican taco spread — a table of tortillas, fillings, salsas and sides laid out so everyone builds their own tacos. This archive is the taquiza playbook: every regional filling, salsa and tortilla specification, plus a taco bar calculator for portioning a crowd.

Taquiza questions
What is a taquiza?
A taco spread: tortillas kept warm, several fillings (al pastor, carnitas, asada, fish), salsas and sides set out so guests assemble their own tacos. It is the Mexican party format, not a single dish.
How many tacos per person?
Plan on 3–5 tacos per guest for a main-meal taquiza, with roughly 100 g of filling per taco. The taco bar calculator turns headcount into shopping quantities.
What goes on a taquiza table?
Two or three fillings, corn and flour tortillas, a salsa flight (at minimum a red, a green and a creamy one), plus sides like frijoles de la olla, cebollitas and lime. This archive documents each component as a specification.
Taquiza vs taco bar?
Same idea, different depth: an American taco bar is usually one meat and toppings; a taquiza runs on regional fillings and real salsas made for each one. The recipes here are built for the taquiza standard.
