Method

  1. Cook the onion, garlic, and jalapeño in oil over medium heat until softened and starting to color.

  2. Add the tomatoes, chipotles, and oregano and cook until the tomatoes break down into a rough, smoky sofrito.

  3. Pour in the beans with their broth and simmer uncovered so the flavors marry and the pot thickens.

  4. Mash about a third of the beans against the side of the pot so the mixture holds together, and season with salt.

  5. Warm the tortillas on a comal until soft and puffed.

  6. Spoon the frijoles charros onto each tortilla with a slotted spoon and top with queso fresco, avocado, cilantro, and lime.
